Single boiler, heat exchanger or dual boiler?
Three ways of solving one problem — espresso wants water at about 200°F, milk wants steam at about 250°F — and the reason machines cost what they cost.
A single boiler makes you wait between the shot and the milk. A heat exchanger and a dual boiler do both at once. If you make one or two milk drinks at a time, the wait is a minor annoyance; if you make four, it is the whole experience.

Espresso and steamed milk want water at different temperatures. Brew water sits around 200°F. Steam needs the boiler well above boiling, around 250°F. One vessel cannot be at two temperatures, and that single fact explains most of the price structure of espresso machines.
Single boiler
One boiler, used for both jobs. You brew at brew temperature, flip a switch, wait for the boiler to climb to steam temperature, texture the milk, then wait again for it to cool before the next shot.
The wait is real — typically a minute or two in each direction — but it is only a problem at volume. Making one cappuccino, you barely notice. Making four, you are standing at the counter managing a machine.
Single boilers are also where the best value in espresso lives. The Gaggia Classic Pro puts a brass boiler, a 58mm commercial portafilter and a bare steam wand under $500. The Lelit Anna and Profitec GO add PID temperature control to the same idea.
Heat exchanger
One boiler, held at steam temperature, with a tube running through it that heats fresh brew water on its way to the group. Brewing and steaming happen at the same time, from one boiler, which is elegant and considerably cheaper than two.
The historical catch is that brew temperature is a side effect. Water passing through a very hot boiler can arrive too hot, which is why heat-exchanger owners learned to run a "cooling flush" before pulling a shot.
Modern designs manage this. The Lelit MaraX controls the steam boiler specifically to hold brew temperature stable, which removes the flush ritual — and is the main reason it is the usual recommendation for a first prosumer machine.
Dual boiler
Two boilers: one held at brew temperature, one at steam temperature. Both jobs available at once, brew temperature adjustable independently, and steam that does not sag when you use it.
This is the most capable architecture and the most expensive. The Breville Dual Boiler puts PID control on both boilers plus a heated group head — the thing that stops the first shot of the day being colder than the second.
What it costs you
Boiler machines take a long time to warm up. A dual boiler or heat exchanger is a plan-ahead appliance: twenty minutes or more from cold before the group head is at temperature. Lelit publishes 24 minutes for the MaraX. That is not a fault, it is physics, and a timer plug is what most owners end up using.
If you want espresso in three seconds on a weekday, you want a thermoblock — which is a different trade entirely.

Questions people actually ask
Do I need a dual boiler?
Only if you regularly make several milk drinks in a row or you want to adjust brew temperature independently of steam. For one or two drinks a morning a single boiler is genuinely fine.
Is a heat exchanger worse than a dual boiler?
Different rather than worse. A heat exchanger gives you full steam power and simultaneous brewing for less money, but brew temperature is a consequence of the steam boiler's temperature rather than something you set directly.
